Steam fish and Bammy is a favourite meal of many Jamaicans, we usually purchase it when we visit seaside restaurants on beach trips. If you take a visit to any public beach on the island there is a nearby seafood restaurant that will have this meal on the menu.
The usual procedure is to make your order, after which you are invited to choose your fish, which is then weighed and the price is quoted to you, you pay and take your seat as your meal is made to order. These are nearly always fresh catches bought from fishermen right at the seaside.
The fish is then steamed after being rubbed with a blend of herbs and spices, vegetables, butter, water cracker and okra and then served as pictured above.
Bammy is a flatbread made from cassava (tapioca, yucca), this method of making bammies was adapted from Taino settlers on the island and has been sustained. Cassava is a starchy root tuber that can be poisonous if not handled properly. This flatbread is bland in taste and is a perfect vehicle for the steam fish sauce/gravy. It is normally steamed or fried.
It is a decadent and really delicious affair and I recommend consuming your fish in between dips in the sea.
